Baked Pasta with Mozzarella & Basil


Very often I get to my place feeling so hungry but not willing to make a complete meal. So this casserole is the kind of dish you wanna have as an option speacially this time of the season. Even if you are in the mood for a romantic dinner or a casual friends gathering, this is perfect! Pair it with a bottle of red wine, and you’ve got the perfect dinner party. The good news is, that it only takes about 30 mins to cook for big group!

INGREDIENTS

Serves 4 to 6 portions

  • 250 grs of pasta. I used Rigatoni

  • 400 grs crushed canned tomatoes

  • 1 garlic

  • 1 tsp oregano

  • salt and pepper to taste

  • 1 cup basil leaves

  • 400 grs fresh mozzarella

INSTRUCTIONS

  1. Heat oil over medium-high on a skillet

  2. Add 1 minced garlic

  3. Add 400 grs of crushed canned tomato

  4. Season with salt, pepper & oregano

  5. Simmer for 10 minutes until it is reduced

  6. Cook pasta for 5 minutes (will be undercooked)

  7. Slice mozzarella

  8. Drain pasta and transfer to a bowl

  9. Mix with tomatoe sauce

  10. Add a handful of basil leaves and 1/4 of the mozzarella and toss

  11. Transfer to a baking dish and top with the rest of mozarrella.

  12. Bake for 25 minutes at 200°
