Very often I get to my place feeling so hungry but not willing to make a complete meal. So this casserole is the kind of dish you wanna have as an option speacially this time of the season. Even if you are in the mood for a romantic dinner or a casual friends gathering, this is perfect! Pair it with a bottle of red wine, and you’ve got the perfect dinner party. The good news is, that it only takes about 30 mins to cook for big group!
INGREDIENTS
Serves 4 to 6 portions
250 grs of pasta. I used Rigatoni
400 grs crushed canned tomatoes
1 garlic
1 tsp oregano
salt and pepper to taste
1 cup basil leaves
400 grs fresh mozzarella
INSTRUCTIONS
Heat oil over medium-high on a skillet
Add 1 minced garlic
Add 400 grs of crushed canned tomato
Season with salt, pepper & oregano
Simmer for 10 minutes until it is reduced
Cook pasta for 5 minutes (will be undercooked)
Slice mozzarella
Drain pasta and transfer to a bowl
Mix with tomatoe sauce
Add a handful of basil leaves and 1/4 of the mozzarella and toss
Transfer to a baking dish and top with the rest of mozarrella.
Bake for 25 minutes at 200°
