AVOCADO: 3 WAYS
I love Avocado! and apparently everybody does these days, so that’s the reason why I’m doing not one but 3 Avocado recipes! Despite the love around it, there’s always been a controversy about it, whether it is a fruit or a vegetable. Well, I’m sorry to disappoint some of you but in fact it’s a fruit.
Of course I have to do this recipe. It’s so simple and so delicious, everybody needs to try it! I’m doing the traditional Guacamole recipe, Mexican style, and no, it does not go with garlic nor chipotle nor mango.
Let’s see, you’ll need:
2 avocados, smashed
2 Tbsp. of onion chopped finely
1 tomato, chopped
2 Tbsp. of fresh coriander leaves, chopped finely
1-2 serrano or jalapeño chiles minced, seedless. (You can totally miss this step)
Salt & pepper
Smash the avocado in a bowl, add half lemon to make sure it doesn’t turn black. Then add onion, tomato, coriander, chiles and lemon juice, mix well with a fork. Add salt & pepper to taste. Garnish with some fried tortilla chips.
AVOCADO TOAST WITH BACON & POACHED EGG
Love bread, love bacon, love poached eggs, anything else? This makes a great quick breakfast!
1 slice of bread, toasted
1 Poached egg. I like it that way but you may use it fried or scrambled.
1 smashed avocado
½ tbsp. olive oil
2-3 slices of Crisp Bacon
Smash the avocado, add the olive oil. Top the toast with the smashed avocado, sprinkle with chili flakes, then add bacon and finally the poached egg. Don´t you love when the egg yolk spreads everywhere? Ah!
I don't think this was invented before (LOL), but I’m pretty sure it is the best dip you'll ever try!
1 smashed avocado
1/2 lemon juice
3oz of fresh goat cheese.
½ tbsp. chili flakes
1 tbsp. Olive Oil
Salt & Pepper
Combine everything together until you have an even creamy paste.
Tip: This recipe makes a great healthy snack just cut raw vegetables in large sticks (julienne) and dip it up baby!
