Lately I’ve been watching all over my YouTube and Instagram feed several posts about Ice Cream Sandwiches, so I had to give it a go and eat the trend!
I have to say this recipe was a total hit with my boyfriend. He loves cookies as much as ice cream, so you guys can imagine how much he was swooning while filming this video. Did I've ever mentioned that my BF films me? He is so sweet (and talented!).
First of all, I decided to make chocolate chip cookies from scratch instead of buying them. In fact, I was a little bit scared about baking them. As you read in my latest post, I do not feel confident about baking sweet stuff, but this recipe went actually pretty good!
Homemade cookies are my new favorite thing in the world. My home smells like heaven and I also enjoy eating cookie dough during the process. By the way this recipe is the best chocolate chip cookie recipe ever! So soft and chewy! (I know... everybody says the same about their recipe).
Here is how to:
INGREDIENTS
1 cup of brown sugar
1/2 cup of granulated sugar
2 unsalted butter bars
2 eggs
2 1/4 cups of all-purpose flour
2 tbsp. of vanilla extract
1 tbsp. of baking powder
1 tbsp. of coarse salt
2 cups of semi-sweet chocolate chips
INSTRUCTIONS
Cream together the butter and the sugars in a mixer until light and fluffy. Then add the eggs, one at a time, and vanilla extract. In a separate bowl mix flour, baking powder and salt. Wisk them together. Then add it to the mixer on low speed until everything is combined.
Finally add chocolate chips and mix until is just incorporated, don’t go any further than that or you’ll spoil de mix and end up with a tough cookie.
Make cookies by hand or using an ice cream scoop. Place them into a baking sheet and bake them for 350° F for 8 to 10 minutes. Let them cool.
This dough batter recipe serves up to 28 cookies! So you may wanna pamper your hole family!
Now comes the fun part. Choose your favorite ice cream. I used Ben and Jerry's Chunky Monkey and Chocolate Chip Cookie Dough. Words can't describe how tasty it is to have a chocolate chip cookie filled up with one big scoop of more chocolate chip cookie dough ice cream. It is obscene!!!
Serve immediately with a glass of milk!
