Baked Eggs with Prosciutto and Spinach


So, are you hosting Sunday brunch this weekend for friends and family and you don't know what to cook? Or wanna surprise your significant other with a fancy breakfast? This is the kind of recipe you want to do even if you don't cook.

What I love the most about this recipe is that you just have to put everything together and that's it!. Literally takes about 1 minute to set everything up before baking it.

It just takes 2 easy steps.

Step 1: Building the dish

Butter the baking dish and line 1 prosciutto slice on each side. I used 4 slices and left the dish's bottom uncovered, but you can add a fifth slice if you want.

Then add a handful of baby spinach, crack the eggs into the dish, pour the heavy cream, season with salt and pepper and top it with the cheeses, cherry tomatoes and fresh thyme.

Step 2: Bake

For 10-12 minutes at 400°. It depends on how you like your eggs. I like mines with the whites set but the yolks still quite runny.

Serve with toasted bread!

Actually there's no exact measure for this recipe, you can add as much or less ingredients as you like. You can easily substitute the prosciutto for chorizo, spinach for kale or add gruyere instead of mozzarella.

I cooked for 2, but it's great if you do it in ramekins and serve an individual and personalized portion.

INGREDIENTS (Serves 2-3 portions)

  • 4 eggs

  • 4 Prosciutto slices

  • 1 handful of spinach

  • 2 Tbsp. heavy cream

  • 1/3 cup of grated mozzarella cheese

  • 2 Tbsp. chevre

  • Cherry tomatoes cut in halves

  • 2 fresh thyme sprigs
