I've been wanting to try out the Maple Bacon Donut recipe for a while now, but when I came across the Pancake Muffins idea, it got me! And what is more bacon friendly than pancakes?
So basically this recipe is nothing but a regular Pancake mix in a muffin shape with donut glaze on top. So simple and delicious you should try it!
Pancake Muffins Ingredients
3 cups all-purpose flour
¼ cup sugar
½ tbsp. salt
1 Tbsp. baking powder
2½ cups milk
1 Tbps. white vinegar
2 tbsp. vanilla extract
2 eggs
½ stick butter, melted
INSTRUCTIONS
In a large bowl mix dry ingredients (flour, sugar, salt and baking powder). Take another bowl and mix wet ones (milk, vinegar, vanilla, eggs and butter). Pour the wet ingredients into the dry ingredients and mix well. Grease and flour the muffin pan and fill cups half full. Bake for 12 minutes at 425° or until light golden brown. Let them cool.
Topping Ingredients
5 Tbsp cup maple syrup
1 cup powder sugar
2 Tbsp whole milk
400 grs crispy bacon, chopped
INSTRUCTIONS
In a small bowl mix the maple syrup with milk and then add sugar. Whisk until nice and smooth. Top the muffins with glaze and bacon. Eat immediately!
Serve with more Maple Syrup!
