Homemade Almond Butter + 3 delicious breakfasts!


I like peanut butter, but since I've discovered almond butter, I am all about it. Actually Almond Butter is considered healthier than Peanut Butter. Both are good sources of monounsaturated fat which helps with lower blood cholesterol levels. However, Almond Butter is a slightly better source than peanut one and also is a better source of fiber. Not convinced yet? wait until you taste it!

I like to start with roasted unsalted almonds, beacause I find that roasting makes them much more savory and helps to release faster their natural oils, but you can totally try it with raw ones. I roasted mine in the oven for 10 minutes at 350°F.

Place them into a food processor with 1 tbsp of honey and 1 pinch of sea salt. The honey step is totally optional, you can make it unsweetened or use any kind: brown sugar, agave honey or splenda/stevia.

Our goal is to get a smooth-chunky mix by grounding the almonds and allow them to release their natural oils. This process takes about 10 to 12 minutes, depending on you food processor's power. Be patient, it seems that it takes forever, but believe me you are getting there eventually. Also a very good tip if you want to accelerate the process is to add 1 Tbsp of coconut oil and keep on blending.

You may need to stop the processor and scrap the sides down with a spoon eventually. Then, continue to blend until a smooth and creamy butter is obtained.

Store in a jar in the fridge up to 2 weeks.

INGREDIENTS

- 1.5 cup of roasted unsalted almonds

- 1 pinch of sea salt

- 1 tbsp of organic honey

For the 3 delicious breakfast ideas:

1. Mango & Almond Butter & Honey Rice Cakes: Spread almond butter over the rice cake, add diced mango and drizzle with honey.

2. Waffles: There's no science in it, but spreading almond butter over waffles and then add mixed berries and drizzle them with maple syrup... well, I promise it will take your breakfast to a supreme level. This combination tastes amazing!

3. Smoothie Bowl: I used to add a spoon of peanut butter over my breakfast bowl all the time, but now peanut has been susbtituted by almond. So, this particulary bowl is: 1/4 cup of greek yogurt blended with mixed berries and topped with flaxseed, chia seeds, raw old fashioned oats and fresh strawberries.
