Caramelized Pears & Macadamia Brittle Ice Cream
As you can tell from my previous posts, I am not that into sweet things as much as I do to salty ones, and I have to say it is not my forte in cooking skills. I feel so much more comfortable creating and cooking salty recipes than sweet ones, I feel a little bit insecure about it, probably because in my family hardly never one does it. So the majority of the dishes that I cook are kinda safe for me, and this is the perfect example. No precise measures, not baking soda, no oven, no disaster risk, so anyone can do it and enjoy it.
This dish is perfect to enjoy after a proper meal or even just with tea or coffee. It is perfect for autumn-winter due to its warm pears and perfect for spring-summer due to its creamy delicious ice cream.
I used green Anjou pears because they are sweetly mellow with a smooth and juicy texture. Also they're good for baking, poaching or roasting, it is the most abundant variety here in Mexico.
First I started by cutting 3 ripe pears into quarters, leaving the skin on. Then scoop out the core. I did it with a spoon but you can make it with a knife. Consider to use them immediately because they tend to oxidize very quickly.
Melt over medium heat 3 Tbsp of unsalted butter in a skillet and cook pears one cut side down until nice golden brown, about 4 minutes, then cook the other cut side down for other 4 minutes.
Then add 1/4 cup of brown sugar and 1 Tbsp of water. Give it a gentle stir and turn your pears skin side down . Add a pinch of sea salt, one tbsp of vanilla extract and cook for another 4 minutes. The caramel will start to reduce.
The ice cream I chose was Häagen Dazs Macadamia Brittle because it's my favorite, I do not need any other reason, ha ha! You can choose your favorite one as well, but I recommend to use a Vanilla based one, and actually I have to say the crunchiness of Macadamia nuts & brittle brings a nice texture to the dish.
I served 3 warm pears slices and 2 medium scoops of ice cream and garnished them with mint.
- 3 ripe Anjou pears cut in quarters
- 3 Tbsp of unsalted butter
- 1/4 cup of brown sugar
- 1 Tbsp of water
- 1 pinch of sea salt
- 1 tbsp of Vanilla extract
- 1 pint of Vanilla based Ice cream
- Mint to garnish
Tip! Do not serve until you actually are gonna eat them or the ice cream will start melting.
